Bread omelette

It was a weekend morning and all of us woke up late. I felt hungry, but didn’t want to cook. So husband took over the kitchen and made this delicious bread omelette. He cooks rarely but when he cooks, it is only breakfast. His cooking is usually done with very minimal ingredients but tastes comforting.

My kids loved it so much that their plate was licked clean. This dish is filling but not heavy. It has a mix of vegetables, eggs, bread and cheese of course, for an extra kick. Feel free to omit cheese if you want to. But do try with cheese atleast once. The method is different from the regular bread omelette. I bet you might not even turn to the usual way of making this dish after trying AK’s version.

Bread omelette

Ingredients

  • Bread slice – 1
  • Eggs – 2
  • Chopped onion – 1/2 cup
  • Chopped tomato – 1/4 cup
  • Green chilli – 1
  • Parsley or Coriander leaves – 2 tbsp
  • Amul Cheese slice – 1 slice (or) Shredded cheddar cheese – 3 tbsp
  • Salt – 1/2 tsp
  • Pepper – 1/2 tsp

Procedure

  • Break 2 eggs in a bowl. Chop all the vegetables. Next mix all the ingredients in the bowl with eggs.

  • Add oil to a pan. Once the pan is warm, add in the omelette mix. Cook the eggs in medium flame.

  • Add in a bread slice. Top it with a cheese slice or shredded cheese. Once the sides are cooked well, start folding the sides, one by one.

  • Serve hot with a cup of filter coffee.

Notes

  • Add more veggies of your choice to the omelette. I would suggest adding mushrooms and capsicum. More veggies makes the dish healthier.
  • Avoid adding cheese if you do not prefer using it.
  • Adding oil seemed more non-sticky than adding butter to the pan. I have used olive oil, but you can use the oil of your choice.
  • Avoid green chilli and increase the quantity of pepper for a different flavor.
