Egg fry is an easy recipe that can be done under 30 mins. Eggs are full of protein. I usually make this as a quick fix during lazy days. I cook some Vadicha Saadham (Steamed Rice) and Egg Fry and it tastes awesome. Also you can have this as a side dish for Sambar or Rasam rice.
Sometimes you need to trust the quote, “Less is more”. With very few ingredients we can make this dish taste delicious. You have to taste it to believe it. So why wait? Lets get cooking!

Ingredients
- Eggs – 5
- Dry Red chilli – 3
- Big onion – 1
- Rock salt (or) Iodised salt – 1 tsp
- Oil – 2 tbsp
Procedure
- Boil eggs in a wide vessel. Add in 1 tsp salt to boiling water. Then add in the eggs. Boil in medium flame for 10 mins. Drain and fill the vessel with cold water to stop the cooking process.

- Grind rock salt and red chillies to a powder. Break the egg shell and cut each egg to half. Also chop the onion and keep it aside.


- Add oil to a kadai. Once the oil is hot, add in the onions and saute till translucent. Then add in the powdered salt and red chilli.


- Saute till raw smell goes off from red chilli. Add in eggs and mix well so that all the sides are coated evenly. Simmer for 3 to 4 mins and serve hot.



- Pairs well with steamed rice, sambar rice, rasam rice, pulao and biryani.

Notes
- Big onions can be substitued with small onions for more flavor.
- After adding salt and red chilli powder to the onions, cook in medium flame. Else, the smell might overpower resulting in a burning sensation in the nose.
